SUN-DRIED TOMATOES


This very meaty special Roma type tomato is perfect for eating fresh, making pastes and sauces, and exceptional for drying. Very dense, meaty and nearly seedless, this plum-shaped tomato is produced on prolific, compact, uniform plants. If you live in a sunny dry climate you can dry tomatoes on screens placed in the full sun each day and bring indoors in the evening. Keep in mind that drying tomatoes outdoors can take as long as 2 weeks. It is easy to dry your own tomatoes in the oven or food dehydrator. For each 5 pounds of fresh tomatoes expect 2 cups of dried. The amount of time it takes depends on the water content of the tomatoes, the thickness of the slices, and how well the air circulates around them.
